Our methodology
Savara uses 50 evidence points under five food principles, each scored from 0 to 20, for a maximum of 1,000. Distinctions require editorial approval; scores do not automatically confer an award. Savara is independent and is not affiliated with Michelin.
venue. From there, it may earn distinctions:
Provenance, freshness, and treatment of raw materials. We expect chefs to source relentlessly.
Balance, seasoning, depth, and intelligence of pairings. The palate must be engaged continuously.
Precision of cooking, structural integrity, and execution. No margin for error in temperature or texture.
Originality, point of view, and emotional resonance. A plate should tell us exactly who is in the kitchen.
Rhythm of the meal, pacing, and execution across courses and across multiple visits.
A perfect meal in a sterile room is a missed opportunity, but food is paramount. Savara conducts multiple anonymous repeat visits before granting top distinctions to ensure the performance is a standard, not a stroke of luck. Inspectors record observed evidence, not reputation, and every distinction requires manual editorial approval.
